The Terroir of Sparkling Wines

A Rich Variety of Terroirs

All Jaillance wines are designated Protected Designation of Origin (PDO), Appellation d’Origine Protégée (AOP) in French.

There are a number of regions in France outside the Champagne area which produce sparkling PDO wines, and which adhere to a strict set of regulations to ensure excellent quality. Requirements include harvests by hand, the use of grapes from within the Appellation area only, and traditional methods of winemaking.

PDO is a Europe-wide certification system which guarantees the origin of certain products from a specific terroir, and preserves the products' history and traditions.

Crémant de Bordeaux - PDO

Bubbles from Bordeaux

Recognized Protected Designation of Origin since 1990, Crémant de Bordeaux benefits from the sunny Atlantic climate of the region. All of Jaillance’s Crémants de Bordeaux follow the traditional method of vinification (see Vinification Methods) and result from one main variety: Sémillon.

Clairette de Die - PDO

The Gateway to Provence

Benefiting from the generous sun of Provence and the cool Vercors Mountains, the small tracts of the Die vineyards grow on slopes between 300 and 700 meters high. Black pine woods and lavender fields, and a blend between contrasting climate and soil, create ideal conditions for the Clairette and Muscat varieties.

Crémant de Die - PDO

The Gateway to Provence

Produced from the same terroir as Clairette de Die, Crémant de Die was granted Appellation d’Origine Contrôlée status in 1993. Crémant de Die is a blend of three grape varieties: Clairette, Aligoté and Muscat.

Crémant de Bourgogne - PDO

A prestigious region, rich in diversity.

Burgundy stretches over the terroirs of the Macon, the Chablis, the Côte Chalonnaise, and the Côte d’Or. The diverse soil and climate, and hot dry summers and cold winters, are what bring fame and reputation to the varieties of Bourgogne wines.
