COPIOUS APERITIF WITH VOUVRAY

What you will need: a low table, armchairs, small red serviettes, a tomato tart, cheese matchsticks, rolled ham stuffed with fromage frais, a few raw vegetable batons to dip into a herb sauce and a bottle of Vouvray.

 

Recipe : cheese matchsticks

Preparation time: 30 minutes
Cooking time: 30 minutes

Ingredients
(for about 40 matchsticks):

  • 100 g of flour
  • salt
  • 1 pinch of Cayenne pepper
  • 50 g of butter
  • 50 g of finely grated gruyere cheese
  • 1 beaten egg yolk

Recipe:

Mix the flour and seasoning. Add the butter in pieces and squash them to obtain a mixture with the consistency of batter. Add the grated cheese and the egg yolk. Knead the dough until it is smooth, adding a bit of cold water if it is too dry. Leave to cool for 30 minutes. Spread the dough on a floured surface. Cut into approximately 12 cm long x 0.5 cm wide matchsticks. Place them on a baking tray. Cook in a very hot oven (200°C) for 10 - 15 minutes: the matchsticks should be golden. Remove from the oven and allow to cool slightly before spreading on a pastry rack.  Store in a metal box.
