Cut the roast turkey into pieces. Cook the meat with the butter in a high sided frying pan. Add the pear juice once it is fully cooked. Leave to simmer for 10 minutes. Add the fromage frais. Mix well to form a sauce. Add the pears at the end. Serve with the tagliatelli.
