All Jaillance wines have Appellation d’Origine Contrôlée status. AOC classification indicates quality; it guarantees the provenance of the wines, and confirms that they are backed by the history and traditions of the terroir. Clairette de Die Tradition, for example, is 2,000 years old, and is made according to the age-old “Méthode Dioise Ancestrale,” unique to this area. Crémant wines – both from Die and Bordeaux – are made by the “Méthode Traditionnelle” – the traditional method.
